Cookie Exchange: Wedding Cookies

Get ready for your Holiday Cookie Exchanges and make these Wedding Cookies during your annual Christmas Cookie bake off. Original recipe featured on Saveur.



Ingredients:
16 tbsp. unsalted butter, softened
6 tbsp., plus 1 cup confectioners' sugar
1 3/4 cups flour
2 cups finely chopped pecans
1 tsp. vanilla extract

Instructions:
Heat oven to 275 degrees. Whip butter and 6 tbsp. sugar in a bowl until fluffy. Slowly add flour and beat until combined. Stir in pecans and vanilla. Shape dough into 3/4 inch balls. Place on parchment paper lined baking sheets. Bake, rotating sheets halfway until cookies are set 25-30 minutes. Transfer cookies to a wire rack. Let cool. Place remaining 1 cup sugar in a shallow dish; roll cookies in sugar until completely coated.
